The Khorezm oasis has long been renowned for its distinctive melon-growing tradition. Today, more than 120 varieties of melon are cultivated in the region. At present, innovative developments are being widely introduced not only to grow this unique crop, but also to process it extensively and transform it into export-oriented products with high added value.
Professors, lecturers, and students of the Department of Food Technology at the Faculty of Chemical Technologies of Urgench State University named after Abu Rayhan Biruni are conducting scientific research aimed at developing modern melon-based food products.
At last year’s traditional Melon Festival, the university team presented a wide range of innovative products. Melon-based juices, ice creams, marmalades, natural syrups, dried products, and other new developments were showcased during the festival.
The primary objectives of these projects are to ensure the waste-free use of melons, extend the shelf life of finished products, enhance their nutritional value, and expand their export potential. The products are prepared using natural technologies without added sugar. Each newly developed product is patented and gradually introduced into practical application.
University researchers are also working on the development of melon-based biopolymer coatings. Such coatings can extend the shelf life of fruit and vegetables, help retain moisture, and improve product quality. Research in this field also creates opportunities for young scientists to achieve success in international competitions and participate in scientific internships abroad.
Another important area of scientific research focuses on studying the beneficial properties of oil extracted from melon seeds. Preliminary studies indicate that this oil is rich in vitamins and can be consumed as a safe and beneficial food product for human health.
According to experts, the extensive processing of melons can significantly increase their economic value. In particular, compared with traditionally dried melon, products manufactured using innovative technologies can generate several times more added value when exported.
The team of Urgench State University is also making extensive preparations for this year’s Melon Festival. The innovative products planned for presentation at the festival are expected to demonstrate the practical results of integrating science, education, and production in Khorezm’s melon-growing sector, while also contributing to the increased competitiveness of national products in international markets.
